The wine grows at an altitude of 100 to 200 meters within the shallow clay-limestone hillsides with a base of schist.
The exposure to the south gives the grapes the full advantage of the generous sun and wind. This terroir brings a very nice minerality and a spicy finish.
A selective and rigorous sorting is made during the manual harvest. The fresh grapes are destalked.
For Grenache, it follows a vatting of 21 days with two daily head of wines in order to obtain a maximum extraction of fruity. To soften the Syrah, a passage during 5 months in barrel develops its spicy side and a sensual presence of vanilla. The blend of this wine can, then, be made.
The deep Garnet colour of this wine gives a true pleasure to transfer it into a decanter 30 min before serving.
This wine should be at the temperature of the room (18°C) and it can also be served fresh (14°C) for the summer grilling.
In its aromas you can find scrubland surrounding the vineyard. Spices and white pepper come also
interfere. Aromas of red fruit (BlackBerry, strawberry and cassis) are present. The passage in barrels brings the subtlety of vanilla and a slight toasted presence. This wine can be served at different temperatures (from 14°C to 18°C) and can agree on all the dishes.
