On clay-limestone slopes with schist subsoil.
Southern exposure to the sun and under the influence of the side wind (Tramontana, the local wind).
A beautiful minerality & spicy finale are thus obtained.
This vinegar is issued from all wines produced in our domaine.
Wines are kept in barrels kept up with a “mother”.
When the barrel is full, it is left out in the sun for 3 years, bringing therate of acidity to 1% and the rate of alcohol to less than 1%.

This vinegar can be sprayed on salads. And it’ll be delicious in sauces. You can also deglaze your pan with it.
