Selection of vine feet in a very old plot of Grenache.
This wine is vinified and aged in 500-litre oak, giving it its structure and elegance.
The harvest is manual with yields that do not exceed 15 hectoliters per hectare (which is very low).

At an altitude of 100 to 200 meters, the shallow clay-limestone hillsides, where these magnificent grapes are harvested and are exposed to the south and enjoy the benefits of the generous brighting sun. The Tramontane delivers its protective breath on the vine.
A selection of vines is made during the manual harvest.Manual scraping is done on a very fresh harvest and the grapes are put in a 500-liter barrel of Allier oak of several wines (no new wood).
A cold pre-fermentary extraction takes 3 to 5 days. Alcoholic fermentation is done on native yeasts without added sulphites.
Regular light reassembly allows for a smooth and silky extraction.
The deep garnet colour of this wine gives a real pleasure to pour in a carafe an hour before serving.
This wine should be served at a normal temperature (16/18°C).
In its aromas, you will find the garrigues that surround the vineyards. Spices and white pepper will mix. Red fruit aromas make it even more seductive.
The barrel brings the subtlety of vanilla and a slight toasted presence.
