At 100 to 200m above sea level, the shallow clay-limestone hillsides where these beautiful grapes are harvested face south and take full advantage of the generous sun.
For this particular elixir, we have selected very old vines on hillsides.

A strict selection of the grapes takes place during the manual harvest. The harvest is kept in a coldstorage room for 24 hours to allow cold pre-fermentation extraction. The grapes are then destemmed and pressed.
The Grenache and Carignan are vinified and aged in oak barrels for 15 to 18 months, which develop their spicy side as well as a sensual vanilla note.
Then the Cuvée can be elaborated. The result is “PAD” Delmas, a structured, powerful, balanced and silky wine.

The deep garnet-red dress of this wine will be particularly elegant in a decanting carafe. Put it there an hour before serving in order to enhance the aromas.
In its flavours, you will recognize the scrubland surrounding our vineyards, together with spices and
white pepper. The aromas of red fruit make it even more attractive.
The ageing in barrels brings an elegant touch of vanilla and slight toasted notes.
